Strawberry Basil Salad

Beautiful and Delicious

 This Strawberry Basil Salad is a light and refreshing option that’s perfect for summer meals or as a healthy side dish. The combination of sweet strawberries, fragrant basil, and tangy feta or goat cheese makes it a standout. 

 

Ingredients:

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup fresh basil leaves, torn or chopped
  • 1 cup baby spinach (optional for added greens)
  • ¼ cup crumbled feta or goat cheese
  • ¼ cup toasted almonds or walnuts (optional)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey (optional for sweetness)
  • Salt and pepper to taste


 

Instructions:

  1. Prepare the Salad Base:
    In a large bowl, combine the sliced strawberries and fresh basil. If you’re adding baby spinach, toss it in as well.
  2. Add Cheese and Nuts:
    Sprinkle the crumbled feta or goat cheese over the top of the salad, followed by the toasted almonds or walnuts for a bit of crunch.
  3. Make the Dressing:
    In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper. Adjust seasoning to taste.
  4. Toss and Serve:
    Drizzle the dressing over the salad and gently toss to combine. Serve immediately for a fresh, flavorful dish.
